The effects of COVID-19 have been challenging for many individuals and families. According to the CDC, 40 percent of adults have struggled with mental health or substance use during the pandemic.

During this virtual presentation on Tuesday, March 9 at 7 p.m., a rep-resentative from the Mental Health Association in Ulster County will provide an overview of the resources available to Ulster County residents to help with substance use and mental health.

Breaking up is hard to do, but in this Cut the Cord virtual workshop, co-presented by the Desmond-Fish Public Library and the Marlboro Free Library, you will learn how saying goodbye to your cable company can save time, money, and your sanity.
Join us online, Thursday, March 18, from 8 - 9 p.m. as DFPL Digital Services Coordinator Ryan Biracree takes you through an exploration of how streaming channels and smart devices can get you less expensive, more reliable, and more versatile services. You will get a brief tour of the cordless marketplace and learn to how to determine which devices or services are right for your home.
You will also learn how to make sure to get the content you want and pay for nothing you don’t want (you may never need to watch a commercial again!).

School Events & News
Students in Aneisha Green’s Grade 3 class at Marlboro Elementary School have been spending time learning about inventors. The lesson began with the class discussing the characteristics and qualities of an inventor, as well as the important role that inventors and inventions have in our daily lives. Next, in honor of Black History Month, each student selected an African American inventor to research. After learning more about what their chosen individual invented, the students were asked to use materials from around the classroom to create a visual display of the item their inventor was famous for. The lesson culminated with students presenting their projects to the rest of the class.
Green said her students enjoyed working on this hands-on assignment, especially since safety constraints have limited the types of projects that could be done this year. “They worked really hard and had a lot of fun!” she said.

Lent has begun. As a reminder, Lenten regulations are as follows: Abstinence on all the Fridays of Lent, and on Ash Wednesday and Good Friday. Good Friday is a day of Fast and Abstinence. No meat may be eaten on days of abstinence
Every Friday in Lent, Stations of the Cross will be held in St. Mary’s at 7 pm
Please note the following when coming to Mass:
One must wear a mask while attending Mass.
Only three individual people per pew, distance of 6 ft. apart. This does not apply to couples or families (unless you want to keep the distance!)
Please use only the designated pews. Do not remove tape from empty pews
When you enter the church, we ask for your to please find a seat and sit down. We also ask that after Mass has ended, please exit the church, do not congregate in the church, we need to clean and sanitize the pews, etc. for the next Mass.
Families may sit together
Holy Communion will be the Sacred Host taken on the hand (which cannot be gloved)
Please bring hand sanitizer with you
No sign of Peace will be exchanged
Please leave your kneelers down when you exit Church, this helps me with the disinfecting process.

Weekly Recipe
Spicy Corn Fritters
PREP TIME 15 mins COOK TIME 25 mins TOTAL TIME 40 mins
SERVINGS16 fritters
Ingredients
Dipping Sauce
3/4 cup rice vinegar
1/2 cup sugar
1 1/2 teaspoons red chili pepper flakes
1 1/2 teaspoons salt
1 large clove garlic, minced
Fritters
1 cup flour
1/4 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon ground coriander
1/2 teaspoon ground cumin
1 egg, lightly beaten
1 teaspoon lemon juice
1/2 cup water
2 cups of corn kernels, (see steps for cutting corn from a cob) cut from 3 large cobs (or frozen corn, defrost and drain first)
4 large scallions or green onions, finely sliced (about half a cup)
1/4 cup chopped cilantro
Extra virgin olive oil or peanut oil for frying
Make dipping sauce
Combine all the sauce ingredients into a small saucepan. Cook on medium heat, stirring with a wooden spoon, until sugar dissolves. Increase the heat to medium high, let boil for 5-10 minutes or so, until the mixture becomes somewhat syrupy.
Remove from heat and let cool. The sauce should continue to thicken as it cools. If it becomes too thick, you can add a little water to it to thin it out a bit.
Make the corn fritter batter
Whisk together the flour, baking powder, salt, ground coriander, and ground cumin in a medium bowl. Add egg, lemon juice and water. Stir vigorously with a wooden spoon until smooth.
Add the corn, onions, and cilantro. Stir until just combined.
Fry the corn fritters
Heat a large frying pan on medium high heat. Add enough oil to generously coat the bottom of the pan. When oil is hot (shimmering not smoking), spoon about 2 heaping tablespoons worth of fritter batter into the pan to form one fritter, patting it down with the back of the spoon as soon as it is in the pan. Work in batches. Leave about 1/2 inch between the fritters in the pan.
Let cook about 2-3 minutes on each side, flipping the fritters when they are nicely browned on one side. When browned on the other side, remove the fritters to a plate lined with paper towels to absorb the excess fat.

Add oil as needed to keep the bottom of the pan well coated. Note that the fritters will likely splatter a bit as you are cooking. So, either use a screen splatter guard, or wear long sleeved clothes while you cook.
Serve immediately with the sweet chili dipping sauce.
