Marlboro High School presents Diversity Night

The Marlboro High School Students Empowering Equality club will be hosting a Diversity Night in the High School cafeteria on Thursday, November 16, from 6 - 7 p.m. Enjoy an evening of food, culture, and performances. All are welcome!

The Marlboro Central School District Board of Education will be holding a business meeting on Thursday, November 16, at 7 p.m. The meeting will take place in the Town of Marlborough Court Room, which is located at 21 Milton Turnpike. There will be a private executive session held prior to the meeting at 6 p.m.

Marlboro Elementary School students paid tribute to our local heroes by inviting former military service members from throughout the community to take part in a Veterans Day assembly on November 9.

The event, which featured heartfelt introductions and patriotic songs, was held to show appreciation to the brave men and women for their service to our country. At the conclusion of the assembly, students acknowledged the veterans in attendance with handshakes and fist bumps and presented them with handmade cards that they had created in their classrooms It was a terrific show of patriotism that the students—and veterans—are sure to remember for a long time!

Mark your calendars! Parent/Teacher Conferences will take place in person throughout the District on Monday, November 20, and Tuesday, November 21, at the times listed below.

These conferences are a wonderful opportunity for parents to touch base with their child’s teacher(s) regarding academic progress. Our teachers are eager to discuss this progress and work with parents to help ensure student success. We encourage parents to take advantage of the following Parent/Teacher Conference dates that are scheduled:
Monday, November 20
Marlboro Elementary School: 12:30-3:30 p.m., 5:30-7:30 p.m.
Marlboro Middle School: 4:30-7 p.m.
Marlboro High School: 5-7:30 p.m.

Tuesday, November 21

Marlboro Free Library
Vet2Vet Coffee Hour will meet Fridays, 1:30 - 2:30 p.m., in the Marlboro Library community room,from now until December 22.

Organized in collaboration with Vet2Vet of Ulster County and the Hudson Valley Center for Veteran Reintegration (HVNCVR), the Veteran Coffee Hour aims to provide a safe and welcoming space for veterans to connect, share experiences and find support from their fellow servicemen and servicewomen. Whether recently discharged or a seasoned veteran, all are welcome to attend and engage in meaningful conversations over a cup of coffee.

Reminder! Thanksgiving for Seniors Luncheon 2023
On Tuesday, November 21, the Marlboro-Milton Lions Club will be hosting a Thanksgiving for senior’s luncheon sponsored by the Town of Marlborough. For members of the Marlborough Seniors group, the luncheon will start at 12 p.m., in the lower hall of the Presbyterian Church; please contact President Annette @ 929-459-3292 or sign up at the meeting to reserve your lunch. Pickup and delivery will be available for all other seniors of the town of Marlborough, you must pre-order by calling Pete Yeaple @ 845-236-4653 or Pete Lyons @ 845-795-2197. When you leave a message please give your name, address, phone number, how many meals, and if you are picking up or need delivery. Pickup will be between 1:30 and 2:30 p.m. at the First Presbyterian Church of Marlboro. The cutoff date to sign up for lunch is Thursday, November 16, 2023!

St. Mary’s Church

Religious Ed office hours will be as follows: Monday, Wednesday and Thursday from 10 a.m. - 2 p.m. Grades 1-5 classes are held on Sunday Mornings at 9:30 a.m. Our next session will be Sunday, November 19. This will also be our “Children’s Mass” at the 11 am Mass. Grades 6-8 classes are on Mondays – next session will be November 20. A reminder – you should be going to Mass on a regular basis, especially those receiving a sacrament this year.

This year, Fr. Tom celebrated his 35th anniversary of ordination on November 14. Let’s all wish him a Happy Anniversary and show him that we appreciate him here at St. Mary’s.

Weekly Recipe
Pumpkin Cupcakes with Cream Cheese Frosting Author: Sally
Ingredients
1 cup (125g) all-purpose flour (spooned & leveled)

1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1 and 1/2 teaspoons store-bought or homemade pumpkin pie spice*
1/2 cup (120ml) canola or vegetable oil*
2 large eggs
3/4 cup (150g) packed light or dark brown sugar
1 cup (225g) canned pumpkin puree*
1 teaspoon pure vanilla extract

Cream Cheese Frosting:
8 ounces (226g) full-fat brick cream cheese, softened to room temperature.
1/2 cup (8 Tbsp; 113g) unsalted butter, softened to room temperature
3 cups (360g) confectioners’ sugar, plus an extra 1/4 cup if needed.
1 teaspoon pure vanilla extract

1/8 teaspoon salt

Instructions
Preheat the oven to 350°F (177°C). Line a 12-count muffin pans with cupcake liners.

Whisk the flour, baking powder, baking soda, salt, cinnamon, and pumpkin pie spice together in a large bowl. Set it aside. Whisk the oil, eggs, brown sugar, pumpkin and vanilla extract together until combined. Pour the wet ingredients into the dry ingredients and use a mixer or whisk until completely combined. Batter will be thick.

Pour/spoon the batter into the liners—fill only 2/3 full to avoid spilling over the sides. Bake for 20-22 minutes, or until a toothpick inserted in the center comes out clean. Allow the cupcakes to cool completely before frosting.

Make the frosting: In a large bowl using a handheld or stand mixer fitted with a paddle or whisk attachment, beat the cream cheese and butter together on high speed until smooth and creamy. Add 3 confectioners’ sugar, vanilla, and salt. Beat on low speed for 30 seconds, then switch to high speed and beat for 2 minutes. If you want the frosting to be a little thicker, add the extra 1/4 cup of confectioner’s sugar (I add it).

Frost cooled cupcakes however you’d like. Store leftovers in the refrigerator for up to 5 days. I recommend a cupcake carrier for storing and transporting decorated cupcakes.
