Marlboro honors our Veterans

Marlboro Elementary School students marked Memorial Day with a special outdoor assembly, which took place at the monuments on the front lawn of Marlboro Middle School on May 26. Veterans and active-duty service members were invited to attend the program, which featured guest speakers, patriotic songs, historical accounts, and more. The event was held to acknowledge and pay tribute to the service and sacrifice of the brave men and women who have fought for our country and our freedom.

Christ Church
Please join us at Christ Church, 426 Old Post Road, on Sunday, June 12 at 4 p.m. for a service with Bishop Andrew Dietsche and the dedication of Father Jerry Brook’s memorial window. Father Jerry was our beloved priest at Christ Church from 2004 to 2014 who touched the lives of our parish and this community.

A reception will be held in Father Jerry’s honor following the window dedication. All are welcome!

GRANNY’S ATTIC RESULTS Once again, Jeanne DeSantis and her many helpers have had a successful Granny’s Attic Fundraiser. Jeanne would especially like to thank LaMela’s Sanitation for their donation of a roll off. LaMela’s has been extremely generous for many years as they have provided us with a means of disposing all of the “left-overs.”

There are so many people to thank, we hope we don’t forget anyone – The Runberg Family, Jean Dayton, Kathy Palazzolo, Eileen Alverson, Ady Pagan, Taso Karabelas, and Ian Trozzi. Because of the efforts of all those mentioned above as well as all of you who donated your unwanted “treasures,” this year’s event yielded an amazing profit of $1,473 which we will use to help defray our ever-increasing Church expenses. Thank you all again.

Knights of Columbus Blood Drive
The Knights of Columbus Fr. Hanley Council along with the New York Blood Center will be conducting a blood drive on Sunday June 19 at the parish hall from 8 a.m. to 12:30 p.m. Appointments can be made by calling the Blood Center at 800-933-2566 or visiting nybc.org/donate and as always walk-ins are welcomed. All COVID 19 safety protocols will be adhered to, and the wearing of masks is required. Please consider donating during this difficult time and save a life. Those that donate a pint of blood will be given a delicious breakfast!

Father Hanley Council 7266 would like to congratulate the following members who recently took their 4th Degree Exemplification becoming members of Monsignor Simmons Assembly 1837 as new Sir Knights. The newest members are, Stefan Ciunga, Joe Lofaro, Sam Lofaro, Joe Lopiccolo, Sebastian Loscerbo and Mark Pesano.

Weekly Recipe
Grilled Peach and Burrata Salad
This grilled peach and burrata salad is one of my favorite summer salads. The peaches are juicy and fresh and caramelized on the grill. It pairs deliciously with the creamy burrata and spicy arugula.
PREP TIME: 10 mins
COOK TIME: 10 mins

TOTAL TIME: 20 mins
SERVINGS: 4 servings

Ingredients
8 oz burrata cheese
3 peaches
1 tbsp butter or ghee
1 tbsp coconut sugar
1/2 cup balsamic vinegar
4 cups arugula
1/4 cup pine nuts
1/4 cup olive oil
black pepper to taste
Instructions
Heat the grill on medium heat. If using an outdoor grill, slice the peaches in half to prevent falling through the grates. If using an indoor grill pan, you can slice the peaches into quarters.

Brush the open side of the peaches with butter or ghee and sprinkle with coconut sugar. Then, grill the peach slices for 2-3 minutes on each side, until you have grill marks, and the open edge has caramelized.
While the peaches are grilling, add the balsamic vinegar to a small pot on medium heat and cook for 5 minutes, or until slightly reduced. It will continue to thicken as it cools.

To assemble the salad, add a small handful of arugula to a plate along with a couple of peach slices. Sprinkle some pine nuts and drizzle with olive oil and the reduced balsamic vinegar. Top it off with a little cracked black pepper.

Notes

If you are not a fan of arugula, you could use spinach, frisee, or another salad green.
