Tunnel to Towers Fundraiser set for September 10

Exciting news! Marlboro High School has been named a School of Excellence by the New York State Public High School Athletic Association (NYSPHSAA).
The purpose of this award is to unite Varsity coaches across the State in challenging their teams to achieve a Statewide academic honor. Marlboro is one of 148 schools that earned the School of Excellence distinction, which requires 75 percent of a school’s Varsity teams to have qualified and received the Scholar-Athlete team award. Congratulations to all our student-athletes for their hard work on and off the field!

Marlboro athletes, please be aware of the following fall sports practice starting dates and times for Junior Varsity and Varsity sports. Athletes will receive their season schedules during their first practice.

Saturday, Aug. 20 9 - 11 a.m., Varsity Football
Monday, Aug. 22 8 - 10 a.m., JV/V Cheerleading, JV/V Boys Soccer, Varsity Girls Swimming, JV/V Volleyball.

Monday, Aug. 22 9 - 11 a.m., Varsity Boys/Girls Cross Country, JV/V Girls Soccer, Varsity Girls Tennis.
Monday, Aug. 22 9 - 10:30 a.m. (Apple Greens Golf Course). Varsity Boys Golf *A one-way shuttle bus from MHS to Apple Greens Golf Course will be available at 8:30 a.m. The bus will load athletes at the back of Marlboro High School.

Weekly Meeting Thursday, August 18 at 1 p.m. at First Presbyterian Church Hall.

All are welcome to attend Marlboro Library’s Book Club! During August’s meeting, our Book Club will be discussing “New York” by Edward Rutherfurd.

Book Club will meet in-person at the Marlboro Library on Wednesday, August 31 at 7 p.m. Copies of August’s selection have been ordered and are available for pick-up. Registration is required, register online at marlborolibrary.org.

STEM Kits Are Now Available for Check out at the Marlboro Free Library!

Build, stargaze, and explore with the Marlboro Free Library’s new STEM kits! Created with a grant from Assemblymember Jonathan Jacobson, these kits allow children to explore science, technology, engineering and math, at home, using exciting tools, toys and books!

Weekly Recipe

Decadent French Toast Stuffed with Strawberries Recipe

Ingredients
1 cup low-fat ricotta or cottage cheese
1⁄2 cup skim milk
2 cups strawberries, sliced
2 Tbsp honey
2 Tbsp sliced or chopped almonds
1 Tbsp butter
2 eggs
1 cup milk
1⁄4 tsp cinnamon
1 tsp vanilla extract
8 slices whole wheat bread
Powdered sugar (optional)
Instructions
1. Place the ricotta, milk, strawberries, honey, and almonds in a mixing bowl and stir gently to combine. Set aside.
2. Heat the butter in a large cast-iron skillet or nonstick pan over medium heat.
3. Beat the eggs with the milk, cinnamon, and vanilla in a shallow dish.
4. Working one slice at a time, place the bread in the egg mixture, turning it over once to thoroughly coat, then add it directly to the hot pan.
5. Repeat until the pan is full.
6. Cook each slice for 2 to 3 minutes per side, until a golden-brown crust is formed.
7. Remove from the pan.
8. Divide the strawberry mixture among four slices of toast, spreading to evenly coat.
9. Top them each with another slice to make a sandwich, then slice on the diagonal to create two equal triangles. Serve with a shake of powdered.

Come to Locust Grove Brewery on North Road, Milton, for the Tunnel to Towers Foundation Fund Raiser! The chicken barbecue will be served from 12 - 2 p.m. on September 10.
