32 Scoops by Mina’s opens in New Windsor

32 Scoops by Mina’s officially celebrated its grand opening on May 14 with a ribbon cutting ceremony surrounded by family and friends, community residents and supporters.

32 Scoops, located at 355 Windsor Highway, is a brand new local ice cream shop that operates under Mina’s Spanish Kitchen. Mina’s Spanish Kitchen has the location here in New Windsor and one in Monroe. According to co-owners Allan Torres and Luis Veras, Mina’s New Windsor location has been in business for the past 11 years.

The current building that now houses 32 Scoops was once a former Rita’s Ice Cream stand. After Rita’s left, several other food businesses occupied the space but eventually closed over time. Now, the once separate building is officially connected to Mina’s and customers can order and enjoy food and ice cream at their leisure.

Construction on the building took time to complete due to the pandemic but new machinery and equipment with additional seating in the back make the space inviting to all customers new and old.

In preparation for the ribbon cutting ceremony in the afternoon, Torres and Veras prepared the ice cream makers and machines, set up decorations and seating and worked on last minute details for the ceremony. Both owners shared that they were both excited to open today and are looking forward to offering this new business to the community. Torres also highlighted this business can now be a place for young adults to come and spend time at their leisure.

“The community has embraced us in a really, really profound way,” said Torres. “We have Minas, and I think we’re going to know the community even more because of 32 Scoops.”

Even with COVID, both Torres and Veras recognized that the pandemic was a challenge for the business but having kept Mina’s open and now having 32 Scoops officially open heading into the summertime has created a positive impact for the community.

“It’s a family oriented business,” Veras said. “The great thing about this type of business is that it is a happy business.” Torres and Veras shared that all they want for 32 Scoops is to be a place for the community to enjoy and come back to often.

As customers arrived at 32 Scoops, Torres and Veras rushed back and forth serving ice cream along with other family members behind the counter.

At around 4 p.m. Torres and Veras along with their wives and family members gathered in front of 32 Scoops and counting down from ten, cut a bright red ribbon officially opening the business. Photos were taken and people continued to talk with one another as more and more people came to get ice cream throughout the afternoon.
